World famous and locally distilled Highland Park Whisky has won a string of awards and is highly acclaimed by exports and enthusiasts alike. Michael Jackson, not the singer but the world renowned whisky writer and critic, described it as ‘the best all-rounder of single malts’. Distilled in sherry casks, it’s sweet, peaty flavour compliments the smokiness of the cheese perfectly. We use the 12 year old malt to blend with our red smoked cheddar. What could be better as an after dinner treat with a wee dram.
